SEARCH_SAMESITE	6 months	This cookie is used to prevent the browser from sending this cookie along with cross-site requests. The main goal is mitigate the risk of cross-origin information leakage. It also provides some protection against cross-site request forgery attacks.
SID	2 years	Security cookie to confirm visitor authenticity, prevent fraudulent use of login data and protect visitor data from unauthorized access.

They register anonymous statistical data on for example how many times the video is displayed and what settings are used for playback.No sensitive data is collected unless you log in to your google account, in that case your choices are linked with your account, for example if you click “like” on a video.
